Brown Betty

Popular pudding in the wartime using left over ingredients

Ingredients
4 slices of bread (stale is better) made into breadcrumbs- I use my coffee grinder to do this, but you can grate them.
2lb (900g) grated cooking apples - if not ordinary apples will be just as good
2oz (50g) butter or margarine
2 tablespoons golden syrup – warm a tablespoon on the hob and the syrup will just drop off the spoon without any mess.
1 teaspoon mixed spice

Method
1.Preheat your oven.
2.Grease a dish suitable for an oven.
3.Mix in the mixed spice with breadcrumbs.
4.Layer with some of the breadcrumbs, then the grated apple dish.
5.Add some small pieces of butter or margarine layering as you go, finishing off with a layer of breadcrumbs.
6.Carefully pour over the golden syrup, ensuring the breadcrumbs are evenly covered.
7.Bake at 180c or Gas Mark 5 for about 45 minutes – topping should be golden crisp when done.

Serve with custard, cream or ice-cream

For 2 - 4 people
